Greek Marinated Chicken Thighs

I'm usually always on the lookout to shake things up when it comes to making chicken.  It's such a versatile meat that usually any flavor combination works well with it, but it's easy to get into a rut and have your chicken get a little bit boring.  So when I saw this popular pin floating around on Pinterest...


...I figured it looked easy and yummy enough to give a try!

The flavors of this chicken were so delicious.  I loved the way the chicken came out crispy, juicy, and tender thanks to the yogurt mixture.  My whole family really seemed to enjoy it too, and paired with some marinated vegetables and orzo, it was a winner of a meal.  I can't wait to put it on the dinner table again soon!



Ingredients [8 servings]
  • 4 lbs chicken thighs (I opted for the skin on mine)
  • 1 cup plain yogurt
  • 2 tbsp olive oil
  • 4 cloves minced garlic
  • 1/2 tbsp dried oregano
  • 1 medium lemon
  • 1/2 tsp salt
  • pepper to taste
  • 1/4 bunch of fresh parsley

Directions

In a medium-sized bowl, combine the yogurt, olive oil, garlic, oregano, salt, and pepper.  Grate the outside of the lemon and add the yellow zest into the yogurt mixture along with half of the lemon's juice, around 1-2 tbsp.  Then roughly chop the parsley bunch, add to the mixture, and mix well.


Add the chicken to a gallon-size zip-top bag along with the marinade.  While removing as much air as possible, close the bag and roll the chicken around until the marinade fully covers each piece.  Marinate the chicken pieces in the refrigerator for 30 minutes.


Preheat your oven to 375 degrees.  Place the marinated chicken pieces in a 9x13 greased pan and cook for 45-60 minutes or until golden brown on the tops.


Serve with your favorite veggies and starch and enjoy!
