Baked Lemon Pepper Chicken

Baking chicken is a super quick and easy way to get dinner on the table on a weeknight.  Mr. L has always loved lemon pepper chicken, particularly made with the Mrs. Dash seasoning blend, but I was happy to be able to substitute with my own homemade lemon pepper seasoning mix that I've made in the past.  

I wasn't too sure if it would live up to Mr. L's standards, but thankfully he assured me that it did!  The chicken came out juicy and flavorful and tasted delicious next to a helping of oven roasted broccoli and some yummy quinoa.  This recipe has officially gone on our "master list" of recipes that we love and I can't wait to make it again!




Ingredients [2 servings]

  • 2 boneless, skinless chicken breasts (more if you're feeding more than 2 people)
  • Approx. 1 tbsp lemon pepper seasoning blend
  • Salt to taste (if your lemon pepper seasoning blend doesn't have salt already in it)

Directions

Preheat oven to 350 degrees.  Grease a small baking dish and add the chicken breasts.



Sprinkle the chicken liberally with the lemon pepper seasoning.


Bake in the preheated oven for about 30 minutes or until the juices run clear.


Serve with your favorite side dishes and enjoy!

Getting to Know Hawaii: My Central and Leeward Oahu Favorites


For my last and final blog post on my Oahu favorites, I wanted to focus on the area in which I spent most of my time while living on island, central Oahu, along with Leeward Oahu, one of my favorite sides of Oahu -- and yes, I realize I've said that about each side!  I can't help that I love this island so much, haha.  

Since both of these areas aren't exactly hotspots for tourism when compared to the rest of the island, this post might be helpful to some of you who'd like to branch out a little and see more than just the typical popular Oahu spots.  Hopefully you uncover a few favorite spots of your own from this list or even come across some totally different ones in your search.  Also, if you have an Oahu favorite that I haven't listed either here or on any of my other posts, feel free to comment below and tell me about it!


FAVORITE EATS

Hughley's Southern Cuisine

Hughley's was officially one of our top favorite restaurants on island.  Since Mr. L and I both come from the Gulf Coast region of Alabama, AKA the Deep South, after a living on Oahu for a while we came to really miss good Southern food.  There's good food on island of course, but we were missing the kinds of dishes we grew up on.  Thankfully Hughley's was there to fill this need for us!  Mr. L swears by their delicious brisket -- he would get it every single time we went and always loved it.  My favorite dishes were the fried chicken, catfish, ribs, hush puppies (I seemed to always have been craving hush puppies since they're so rare), mac and cheese, cornbread...yeah, I could probably go on and on!  And the best part of the meal was the sweet tea.  It is delicious, sugary heaven!  Basically, Hughley's is full of good food and good people so I highly recommend them to anybody looking to satisfy any Southern food cravings they may have!


Loco Moco Drive Inn

Loco Moco Drive Inn (one of many "Drive Inns" on Oahu that, surprise, doesn't have a drive-in, lol) consists of down-home, local grub -- the kind that sticks to your ribs.  We frequented this location quite a bit since it was close to home, cheap, and delicious.  Their selection is ENORMOUS, which is one of the things I loved about it since there's usually something to please everyone.  Mr. L loved to get the cheeseburger and chicken katsu and I fancied the garlic chicken, mochiko chicken, teri burger, and sometimes the garlic shrimp, although it didn't compete with the North Shore shrimp trucks.  Hopefully I'll be able to recreate some of these Hawaiian staples here on the mainland because I sure do miss them!

Liz's BBQ

I feel like Liz's has some of the best advertising of any my "favorites" lists.  Now, I've never seen a commerical for them on TV or anything like that, but let me tell you, when you exit the Pearl Harbor commissary or the NEX and your nose picks up the heavenly scent of marinated, grilled meats of different varieties, you instantly begin hearing your stomach growling and feel your mouth start to water.  For some reason, it just has this affect on people, especially with Mr. L and me!  We both loved the chicken plates and I was also a fan of the pork sticks, although they never really seemed to have them anymore for some reason.  And it may be a tad pricey for a combo plate, but honestly, it's a lot of good food that tends to fill you up pretty easily.  When Mr. L and I think back on the food we miss most on island, Liz's is definitely on this list.  Guess I have to learn to make BBQ like this in Alabama!

The Forty Niner Diner

The Forty Niner was another recent find of ours that became our go-to breakfast spot for our last little while on Oahu, especially for FROs (fried rice omelets).  If you've never tried a FRO before, I highly recommend giving one from here a shot!  Other than FROs, the Forty Niner also serves up a range of breakfast items like pancakes (the banana mac nut ones are delicious!), waffles, Portuguese sausage, loco moco, and much more.  They also have plenty of traditional local lunch and dinner options like burgers, oxtail soup, garlic chicken, saimin, and much more.  If Mr. L and I ever make it back to Oahu for a visit, the Forty Niner will definitely be our first stop one morning for breakfast!


Monkeypod Kitchen

Open from 11AM to 11PM Monday-Friday; 9AM to 11PM Saturday-Sunday

The Monkeypod Kitchen is a deliciously wonderful restaurant located on the western side of Oahu in Ko'Olina.  They're committed to serving fresh and locally sourced ingredients and that commitment really shines through in their food.  The last time Mr. L and I were there, we totally loved everything we had.  My Big Island cheeseburger was tender and juicy and Mr. L would NOT stop raving about his pulled pork sandwich.  I'm pretty sure he devoured that thing in about three bites, and for him, that rarely if ever happens at any restaurant!  I was thrilled, needless to say :)  We also love love love Monkeypod's pies.  The chocolate cream pie is to die for!  We only wish they'd open up a Monkeypod right down the street from us in Alabama.  If only!  :(

Pearl Harbor Historical Sites

I feel like I've always had a special place in my heart for the Pearl Harbor Historical Sites.  If you're unfamiliar, these sites include (as per my definition): the USS Arizona Memorial; the USS Bowfin Submarine Museum and Park; the Battleship Missouri; the USS Oklahoma Memorial; the USS Utah Memorial; and the Pacific Aviation Museum.  The USS Arizona is possibly the most famous war grave in the United States.  The memorial is located over the sunken hull of the Arizona and is incredibly emotional and moving.  The USS Bowfin Submarine Museum and Park, which resides in the same complex as the Arizona Memorial, is honestly my most beloved museum in Hawaii thanks to a personal connection I discovered within my own family.  The Battleship Missouri is a battleship-turned-museum and floats nearby the Arizona as a symbol of WWII's end.  The USS Oklahoma Memorial and the USS Utah Memorial are similar to the Arizona in that they represent two more ships with an almost complete loss of crew.  And the Pacific Aviation Museum is a wonderful museum on Ford Island celebrating the role of aviation in Hawaii's history.  Although these activities all together can make for quite a long day, I always made sure to include them in any itinerary I planned for family and friends.  Visiting all or most of these sites is easily the number one activity I recommend for anyone visiting Oahu, whether it's their first, second, or 102nd trip!


Aiea Loop Trail


Aiea Loop Trail is a very nice jungle/forest hike in Aiea with a fantastic view of the H3 at the midway-ish point.  It's around 5 miles long if you do the entire loop and is a great hike not only to commune with the beauty of Oahu's nature, but to also bond with a furry friend since it's a dog-friendly trail!  Our dog Lila loved hiking here, although she'd beg to be carried if we did the whole loop, haha.  I also really like that you get to spot different kinds of plants all along the trail, including bushes and bushes of strawberry guava, a tart but delicious (and actually non-native) fruit.  If you're looking for a way to stretch your legs as well as your dog's in the central Oahu area, Aiea Loop would definitely be my recommendation!


Hickam Air Force Base Dog Beach


I know, I know.  It seems a little odd that a "dog beach" would make it to my favorite spots list, but just hear me out!  As a dog owner, this place was absolutely perfect to let my youngest dog burn some energy and splash in the waves (Liam HATES water, so he just got extra loving when we came back home!).  When the tide is out, a sandbar becomes apparent and makes for a great area for the dogs to just run and run until they are dog tired (ha ha).  I probably wouldn't lay out here or spend an actual "beach day" here, but you can't beat having such a great (and for us, close) place for your furry friends to enjoy the ocean!


Ko'Olina Lagoons


The Ko'Olina Lagoons are a magical set of four lagoons located on Oahu's west side near Kapolei.  Although the lagoons themselves are actually all man-made, they are still incredibly gorgeous and picturesque.  They're also perfect for families and kids since there are essentially no waves thanks to the rocks that keep the lagoons protected from potentially rough ocean currents.  Fish and other kinds of sea life are definitely prevalent here as well, making it a nice location to get some snorkeling in.  Lagoons one and three are my personal favorites!  You will most likely have to deal with crowds here since, one, it's popular with locals, and two, many hotels grace the beachfronts here, like the Marriott and Disney's Aulani.  Because of this, parking, although free at the fourth lagoon and in some beach access spots at the others, can be difficult to come by.  If you have cash on you, you can also park in the "overflow" area close to lagoon 4 in the marina for $10 a car.  Regardless of the crowds and potential parking headaches though, Ko'Olina is a gem that should be experienced.

Ka'ena Point Trail Leeward Side


Ka'ena Point on the Leeward side of Oahu was the first coastal hike I went on after moving to Hawaii and it quickly won my heart.  The views on this side of the trail are purely stunning.  It's one of the things that first made me feel like I was really living in Hawaii.  Ka'ena Point then became one of my favorite places to take friends and family when they would come to visit.  I love that you have such a good chance of seeing monk seals sunbathing, albatross and their nests in the sanctuary, dolphins frolicking in the ocean, and humpback whales in the winter months along this hike.  It's really just a fantastic way to immerse yourself in nature!  There can be some safety issues at the trail parking lot like car break-ins, but please don't let that deter you.  Ka'ena Point is too fantastic to miss!

Portuguese Bean Soup

Back a few months ago when I had a girls' weekend in Kauai, I had a bowl of Portuguese bean soup, a Hawaiian dish, from a local restaurant.  I'd never tried it before, but I ended up really enjoying it!  I knew that it would be a great comfort food that Mr. L would love, so I definitely wanted to try to recreate it at home.  Thankfully Allrecipes was able to come to the rescue once again!

This is a wonderful, hearty soup that is perfect for chilly days.  The broth is very flavorful and all of the veggies make for a great variety of textures.  It's actually quite simple to make, but it does take a while since it does a lot of simmering.

After making this dish a couple more times, though, I do recommend three things.  One -- you can use pretty much any type of sausage you want.  I recently used Conecuh sausage and it was super tasty!  Two -- pan-fry your sausage before hand.  I think it really makes a difference in the flavor of the soup!  And three -- if you're not so much of a cabbage fan like me, go ahead and reduce the original recipe amount of a 1/2 head of cabbage to 1/4 head like I did below.  That way the soup isn't overloaded with cabbage!

Go ahead and give it a try.  You won't regret it!  :)

Recipe adapted via Allrecipes.com


Ingredients [8 servings]
  • 1 ham hock
  • 2 10oz linguica (Portuguese) sausage
  • 1 onion, minced
  • 2 quarts water
  • 4 potatoes, peeled and cubed
  • 2 celery ribs, chopped
  • 2 carrots, chopped
  • 1 15 oz can stewed tomatoes
  • 1 8oz can tomato sauce
  • 1 clove garlic, minced
  • 1/4 head cabbage, thinly sliced
  • 1 15 oz can kidney beans

Directions

Take your linguica sausage and cut into slices.  Pan-fry until sausage is crispy.


Place ham hock, sausage, onion, and water into a Dutch oven over high heat.  Bring to a boil, then reduce heat to medium-low, cover, and simmer for 1 hour.



Remove meat from ham hock, chop, and return to soup.


Stir in potatoes, celery, carrots, stewed tomatoes, tomato sauce, and garlic.  Cover and continue simmering for 1 1/2 hours, stirring occasionally.


Stir in cabbage and kidney beans and cook until the cabbage has softened, about 15 minutes.



Spoon into a bowl and be sure to enjoy!

Getting to Know Hawaii: My Honolulu and South Oahu Favorites

In order to shorten the number of posts I could potentially do on the topic of my Oahu Favorites, I decided to combine my Honolulu (town) favorite spots and my southern Oahu favorite spots.  In this case, southern Oahu consists of everything from Diamond Head to Makapu'u, including the town of Hawaii Kai.  Hawaii Kai is located just to the east of Honolulu and is absolutely beautiful and charming.  It has some of the best scenery on island in my opinion!  

And then, of course, Honolulu is a huge, beautiful, and diverse city with so many different options when it comes to eating and sightseeing.  Since it is so large, you'll also have to forgive me for this post for being so long.  I couldn't narrow down my favorites to anything less than what I have below sadly!  But trust me when I say everything I do have on here are places that I truly enjoyed in the time we were lucky enough to live on Oahu!


FAVORITE EATS

Nico's Pier 38

Open from 6:30AM to 9PM Monday-Saturday; 10AM to 9PM Sunday

Nico's is a delicious gem located off of Nimitz Highway right where fishermen bring in their catches daily for the rest of us to purchase and enjoy.  Because of their location (which has a very nice interior, by the way), you can pretty much guarantee that Nico's will always be serving up something fresh and delicious on its specials menu in the evenings!  We actually prefer to eat here for lunch thanks to more traditional dishes like chicken katsu, loco moco, salads, and other "lighter" fare, but the dinner choices like the ahi, soups, and fresh catches can be pretty great too!  Looking back, we definitely should have eaten here more!

La Tour Cafe

Open from 10AM to 9PM Sunday-Thursday; 10AM to 10PM Friday-Saturday

La Tour Cafe was always one of my favorite stops on island.  What first drew me to this little gem were the macarons that they serve up every day.  I was on a macaron kick for quite a while and La Tour definitely helped satisfy my cravings!  Then I began to try all of the other yummy things on their menu, like the flatbread pizzas, the crispy chicken sandwich (so good!), the chicken pesto sandwich, the La Tour burger...yep, I could keep going for sure!  I am definitely missing this place something fierce!

Lunch from 11AM to 2PM; dinner from 5PM to 9:30PM

For the longest time, Mr. L and I always went to another teppenyaki restaurant on island to get our hibachi fixes.  Then one day towards the end of our time in Hawaii, we gave Tanaka of Tokyo a second chance.  I'm so glad we did!  It turned out to be way better than we remembered and knocked our old favorite out of the park.  We were super lucky to go in at a random mid-afternoon time and scored our own table, so that definitely helped.  But the food and service were so good!  Even when a mistake was made on one of our orders, the chef treated it like it was no big deal and I got a free steak out of it!  If we were still on island, Tanaka would absolutely be our number one teppenyaki restaurant of choice, hands down :)

Duke's Waikiki

Breakfast buffet from 7AM to 10:30AM; lunch from 11AM; lunch buffet from 11:30AM to 2:30PM; dinner from 4:45PM to 10PM; Barefoot Bar open from 11AM to midnight

Duke's really won me over, but unfortunately for me, that didn't happen until our very last night on Oahu.  I wanted to go somewhere memorable with our friend SJ to celebrate all of our wonderful memories in such a beautiful place, and I'd heard a lot about Duke's from many people.  I'd actually eaten here before for the breakfast buffet, and it was really tasty, but I'd never gotten a chance to try it for dinner.  Let me tell you, they really hit it out of the park for us!  Our food was outstanding.  The beef tenderloin and ribeye were divine, the sides were delicious, and that hula pie they serve is to die for!  We were bursting at the seams but we still couldn't stop ourselves from trying just one more bite.  Our waitress was also very personable, polite, and helpful which made the experience that much nicer.  This was one of the meals I just didn't want to end -- partially because of the food, partially because of the company!  SJ, if and when we make it back to Oahu, I'm taking you back here and it'll be my treat this time!  :)

Leonard's Bakery

Leonard's is one of those must-visit places down in Honolulu.  It's iconic sign and pink boxes of deliciousness won their way into my heart as one of the best places on island to get malasadas, or Portuguese donuts.  You can get these little beauties plain (no filling) or with a custard, dobash (chocolate) or haupia (coconut) filling.  My favorite was always the custard!  They also offer monthly "special" flavors, and let me tell you, if you are ever visiting Oahu in the summer months, keep an eye out for the pineapple filling.  It is the best!!

Liliha Bakery

Open from 6AM to 12AM daily

Liliha Bakery is another bakery gem that I was lucky enough to live relatively close to.  The owners have another location in town, but seeing as how I'm not a traffic person, I never made it to that particular location.  Fortunately I got to try this Nimitz location and was able to experience the magic of the coco puff myself.  A coco puff is a delicious pastry treat with chocolate filling and a delicious pastry cream-esque topping.  Mr. L and I could eat these every day!  They also have plenty of other baked goods on hand as well as a full restaurant, although we never did get to try it.  However, we were plenty happy with the boxes and boxes of coco puffs :)

Waiola Shave Ice

Waiola Shave Ice was another recent find for me and Mr. L.  That was one thing that was wonderful about Honolulu -- there was always something new to try or experience, no matter how long you lived there!  And this find?  Well, it was a doozy, people.  After coming to Waiola's new location in the Ward Center, I officially found my new ultimate favorite shave ice.  Matsumoto's is great and Aoki's was fabulous when it was still open, but in my opinion, neither holds a candle to Waiola.  The ice is so smooth and the flavors are an explosion of deliciousness.  I'm drooling just remembering it!  Now, while I go ponder if purchasing this in a response to my severe lack of shave ice is a responsible decision, if you're on island, just make sure you go to any of the Waiola Shave Ice locations -- it's worth it!


FAVORITE SPOTS

Eat the Street


Eat the Street was always one of my favorite events on Oahu.  Dozens of food trucks would gather in a parking lot on South Street and serve up all kinds of delicious treats to thousands of people on the last Friday of every month.  Every time Mr. L and I got to go, we were never disappointed!  Over the years, we naturally developed our favorite food trucks out of the bunch.  Some of them included Soul Patrol, Paul's Poppers, Wow Wow Lemonade, Tin Hut BBQ, Hawaiian Fresh Farms, and SO many more.  Keep in mind that since this is an assortment of food trucks, it's best to bring cash, and there are ATMs on the premises.  Now I have to go start campaigning to bring an "Eat the Street" event here to Alabama!  :)

Diamond Head


Diamond Head is the most well-known natural landmark in all of Hawaii.  As many as 2,000 people per day climb this 0.75-mile hike, and it's very easy to see why it's gotten so popular.  The 360 degree views from the top of Diamond Head overlooking everywhere from Barbers Point, Waikiki Beach, Hawaii Kai, Koko Head, and the Ko'olau mountain range are stunningly breathtaking as well as the highlight of many a visitor's trip to beautiful Oahu.  Because it can become SUPER crowded and also very hot, I would always take my friends and family early in the morning, starting our hike between 7 or 8AM.  It's definitely a great way to wake yourselves up and have an awesome start to your day!

Pu'u 'Ualaka'a State Park


Pu'u 'Ualaka'a State Park has one of the best views of Honolulu and Diamond Head that also happens to be super easy to get to.  You just have to drive to the park!  When friends or family would visit, I would always plan to start the morning with hiking Diamond Head and then come here soon after.  It was really nice to get such different points of view of the city of Honolulu and beyond!  This park is tucked into the backside of the Ko'olau mountain range and is actually usually pretty secluded.  It's a great place to take a picnic and even watch the sunset.  Just keep an eye on when the park closes -- it changes depending on the time of the year.

KCC Farmers' Market


KCC Farmers' Market was probably one of my favorite farmers' markets on island.  They have a wide selection of fresh produce and prepared food from stands, and although it can get very, very crowded, I still think it's worth visiting.  The market is located very close to Diamond Head on the Kapiolani Community College campus.  I definitely recommend getting there sometime around opening to ensure you get the pick of all of the delicious foods the vendors bring.  And pro-tip: try the Portuguese sausage stand towards the back -- the sausage is fantastic!

Bishop Museum


The Bernice Pauahi Bishop Museum is an absolutely fantastic museum located in Honolulu.  It has a myriad of artifacts and knowledge that really help expose each visitor to the rich history and culture of Hawaii as well as its present-day accomplishments.  Their permanent exhibit includes an incredible three-story open hall with hundreds of displays with an incredible amount of information regarding Hawaii's founding, its monarchs, its people, and how it became apart of the United States.  Their rotating exhibits are also great.  The last time we went, the exhibit was about rollercoasters, and they've done things like Legos in the past.  Super fun!  I highly, highly recommend that anyone who wants a more thorough background of how Hawaii came to be what it is today visit the Bishop Museum -- it's completely worth it!  

Hanauma Bay


Hanauma Bay is one of those very special places on Oahu (and therefore very popular).  This bay is one of the top snorkeling locations on Oahu, and for good reason.  It's absolutely teeming with all kinds of sea life!  It's a great location for diving too, although you do that farther out into the water.  Since Hanauma is so popular, you need to arrive there before 9AM -- preferably around 7 to 8.  You get a much better experience without the crowds, and you get to choose the best snorkeling areas before they become overrun (I prefer the two open areas and the reef in between towards the bottom of the above picture).  There is a steep admission fee, but if you're military or kama'aina you get in free!  Now that's a price anyone would be happy with ;)

Spitting Caves


Spitting Caves (AKA China Walls) is a very special coastal area located in Hawaii Kai.  The smooth, layered rock is a testament to the power and force of the Pacific Ocean, which pounds the coastline daily.  At this particular location, there's a cave that actually "spits" back out waves that roll violently into the cave, creating a spectacular effect.  I absolutely loved coming here to watch the waves roll in and out of that cave and gaze out into the ocean.  It's also a great place to watch a sunset!  Since it's in a neighborhood, just make sure to remain respectful, pick up after yourself, and don't block any driveways if you choose to visit this beautiful place.
