Hamburger Pie

When I was growing up, I was definitely a picky eater along with one of my brothers.  I know my mom struggled with this as well as my grandmother, but when they actually did find a recipe we enjoyed eating, they stuck with it, like this recipe for hamburger pie.

It's quick and simple straight up comfort food that really reminds me of home.  In my grandmother's original version of it, she used dried bell peppers and almost minced the onions so we wouldn't be able to tell there were vegetables even in this dish.  However, now that I'm not so entirely picky with my food, I kept the veggies at a nice, chunky dice to add a good crunch.  If you've got a picky eater though, feel free to use my grandmother's method instead :)



Ingredients
  • 1 lb ground beef
  • 1/2 of an onion, diced
  • 1 green bell pepper, diced
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 8 oz cans tomato sauce
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 cup sour cream
  • 2 cans of biscuits (I used 5 count)
  • 1/2 cup shredded cheddar cheese
  • 1 egg, slightly beaten
 Directions

Place your ground beef in a large skillet and cook until browned.


Drain the excess fat and then add in the salt, pepper, diced onion, and bell pepper and cook until the vegetables are slightly softened.


Stir in the tomato sauce, chili powder, and garlic powder and heat through.


In a separate bowl, add the sour cream, lightly beaten egg, and cheddar cheese and mix until combined.


Add the sour cream mixture to the ground beef mixture and mix well.


In a greased 9x13 casserole dish, arrange half of the biscuits in the bottom of the dish.  (I made mine in two dishes so I could give one to a friend for dinner).


Pour the sauce mixture over the biscuits and then layer the rest of the biscuits on top.  Sprinkle a small handful of cheddar cheese over the top layer of biscuits.


Bake in a 350 degree oven for around 25 minutes, until the biscuits are a nice golden brown.


Serve with a nice helping of veggies and enjoy!
