Chicken Parmesan Sliders

Thanks to this great recipe from the Slow Roasted Italian, I was able to throw together a yummy and fun weeknight meal back a few weeks ago.  Mr. L and I both loved the flavor of them (I'm a sucker for chicken parm) and decided they were a refreshing take on dinner.  These would be great as party appetizers as well, especially for any sporting events coming up -- I'm filing these away for football season for sure!

Recipe via the Slow Roasted Italian


Ingredients
  • 2 tbsp extra-virgin olive oil
  • 3 chicken breasts cut into about 12 inch pieces
  • 1/2 tsp salt
  • 2 tsp black pepper
  • 3 tbsp unsalted butter
  • 1 tsp garlic powder
  • 3 ounces grated Parmesan cheese
  • 3/4 cup marinara sauce
  • 4 oz shredded mozzarella
  • 1 package Kings Hawaiian savory butter rolls

Directions

Preheat your oven to 400 degrees.  Place the rolls on a cutting board and slice them in half.  Then place both the tops and bottoms of the rolls a baking sheet, cut side up.


Melt the butter in a microwavable bowl and add in the garlic powder.  Brush the butter mixture on the cut side of the bread and bake for 8-10 minutes until lightly golden brown.


Drizzle the olive oil into a large skillet and warm it over medium heat.  Sprinkle your chicken pieces with half of the salt and half of the pepper and cook in the skillet until browned and cooked through (flip as needed), around 8 minutes total.


Remove the bread from the oven, place the top halves of the rolls on a plate, and set aside.  Sprinkle the Parmesan over the bottom halves of the rolls and top with the cooked chicken.  Spoon about 1 tbsp of marinara sauce over the chicken and top it off with the mozzarella cheese.  Bake for about 5 minutes or until the cheese is melted.


Remove from the oven and put the top halves of the rolls on the sliders.  Serve and enjoy!
