Chicken Caesar Sandwiches

Mr. L and I are huge fans of chicken caesar salad.  I mean, BEYOND huge.  It's one of our go-to meals in any restaurant, and we just can't seem to get enough of it most days.  So when I saw this recipe on Pinterest courtesy of Rachel Schultz, I HAD to have it on my dinner rotation ASAP.

When it came time to make that specific recipe, however, I wanted to use already cooked chicken I had leftover from a rotisserie chicken I shredded.  So I essentially took out the slow cooker part and did it all in about 15 minutes on the stove.  You sure can't beat a 15 minute dinner!!


Ingredients

  • 1/2 rotisserie chicken, shredded
  • 1 cup Caesar dressing
  • 1/2 cup shredded parmesan
  • 1 tbsp dried parsley
  • 2 tsp black pepper
  • 2 cups Romaine lettuce (I used green leaf, so sue me ;) )
  • Hamburger buns
Directions

Grab a medium-sized pot with a lid and add your shredded chicken.  



Also dd a cup of your favorite Caesar dressing, the parmesan, the parsley, and the black pepper and mix together.

After everything is thoroughly combined, throw the lid on and heat on low for about 10-15 minutes, keeping an eye on it to make sure the cheese doesn't burn.


When the mixture has come together in an ooey-gooey delicious mess, set out your hamburger buns, place some lettuce leaves on the buns, and add a hearty amount of the chicken Caesar mixture.  Serve and enjoy!



I ended up adding another layer of lettuce (gotta love that crunch!) and found that one sandwich was more than filling for me.  I also noticed that the original recipe estimated a yield of about 3-4 sandwiches, but we easily made the mixture stretch to 6 sandwiches total.


This is a fantastic yet different meal to throw onto your weekly dinner rotations, albeit not entirely healthy, but you can easily change that up with a low fat, low calorie Caesar dressing, either homemade or store bought.  Regardless, I highly recommend it, so give it a try!
