Baked Creamy Beef Taquitos

While browsing the internet for inspiration, I ended up stumbling upon a recipe for baked chicken taquitos.  If you're anything like me, you've already got a ton of chicken recipes on hand, but this one sounded yummy, quick, and easy, so I decided to change it around and try it with beef instead.

It turned out really well, and I can't wait to make these little rolls of deliciousness again soon!




Ingredients
  • 1 lb ground beef
  • 3 ounces of cream cheese, softened
  • 1/4 cup green salsa (I went with red)
  • 1 tbsp fresh lime juice
  • 1/2 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp onion powder
  • 2 cloves of minced garlic
  • 3 tbsp chopped cilantro
  • 2 tbsp sliced green onions
  • 1 c shredded Mexican flavored cheese
  • Small flour or corn tortillas
  • Kosher salt
  • Cooking spray
Directions

Go ahead and brown up your ground beef in a skillet; drain and set aside.  Preheat your oven to 425 degrees and line a baking sheet with foil (which I didn't to but would have made cleanup much easier!).


In a large bowl, mix together the cream cheese, salsa, lime juice, ground cumin, chili powder, onion powder, and minced garlic.


Once everything is nice and combined, add in the cilantro, green onions, beef, and cheese.




Now spread a couple of tablespoons of the mixture (depending on how big your tortillas are) onto your tortillas.  Roll the tortilla up very tightly and set onto the baking sheet; repeat until all of the mixture is gone.



Make sure none of the taquitos are touching and then spray the tops lightly with cooking spray.




Bake for 15-20 minutes until the taquitos come out crispy and golden.




Add whatever toppings you'd like (more salsa, cheese, sour cream, guacamole) or just eat 'em naked!
