Chicken Bundles

After spotting this recipe on Pinterest and realizing how easy it must be to make, I threw it on our weekly menu a few weeks back.  When Tuesday rolled around, truth be told I was a little excited to be testing it out -- it definitely looks delicious!

Chicken Bundles via Quick-and-Easy-Dinner.com

Ingredients
  • 4 oz cream cheese, softened [I think I ended up using a whole package for a creamier filling]
  • 1 13 oz can chicken (or equivalent cooked chicken)  [I opted for cooked]
  • 1 tbs sesame seeds
  • 1/4 tsp parsley
  • 1 tbs finely chopped or minced onion
  • 2 cans Pillsbury crescent rolls [You may not end up using both cans of rolls; just keep in mind one can will equal four bundles (keeping every 2 triangles together)]
Directions

1.  Combine the first five ingredients in a mixing bowl; mix well.

All mixed together!

2.  Open one package of crescent rolls and do NOT divide into triangles.  Keep them as rectangles by only separating every two triangles, forming four rectangles.  Press the seams together to keep the triangles from separating.  If you want more than four bundles, open the second can, too!

3.  Put a spoonful of the chicken mixture in every square and fold the corners into the middle (I did opposite end to opposite end).  It doesn't need to be pretty, just secure!  Be sure to flip your bundles over to make sure your triangle seams aren't coming apart (mine tried to be sneaky and split after I'd folded them up).

4.  Place on a greased cookie sheet lined with foil (saves some clean up time!) and bake at 375 degrees for 15-20 minutes or until golden brown and delicious.

5.  Pull those bad boys out of the oven, garnish with sesame seeds and parsley (or pre-garnish like I apparently did above...), and serve with some roasted veggies.  Delicious!

I must say, the recipe was certainly a success.  Mr. L loved it enough to request it again the next week, and I enjoyed it as well.  I'll certainly be filing it under my "quick and easy" recipe list!
